  紅薯是人們冬季常吃的一種食物,有著良好的營養成分。它的不同加工品也得到人們的歡迎,像紅薯淀粉。那么,紅薯淀粉是怎么做出來的呢?紅薯土豆磨粉機廠家告訴我們。


  (1)原料(liao)選(xuan)擇:由于(yu)紅(hong)(hong)(hong)薯(shu)(shu)品(pin)(pin)種(zhong)(zhong)不同(tong),其品(pin)(pin)質(zhi)與淀(dian)粉(fen)(fen)(fen)(fen)含量也(ye)不同(tong),即使同(tong)一品(pin)(pin)種(zhong)(zhong),在不同(tong)產(chan)地,其品(pin)(pin)質(zhi)也(ye)有很(hen)大差(cha)異。選(xuan)用“一窩(wo)紅(hong)(hong)(hong)”、“勝利(li)百號”等白心(xin)品(pin)(pin)種(zhong)(zhong),比“138”等紅(hong)(hong)(hong)心(xin)品(pin)(pin)種(zhong)(zhong)可(ke)多出(chu)(chu)淀(dian)粉(fen)(fen)(fen)(fen)10%左(zuo)右,而且粉(fen)(fen)(fen)(fen)塊(kuai)白,粉(fen)(fen)(fen)(fen)質(zhi)好。另外需適時起(qi)(qi)薯(shu)(shu),紅(hong)(hong)(hong)薯(shu)(shu)起(qi)(qi)早(zao)了成(cheng)熟不夠,出(chu)(chu)粉(fen)(fen)(fen)(fen)率低;起(qi)(qi)晚了易受霜凍,也(ye)影(ying)響(xiang)(xiang)出(chu)(chu)粉(fen)(fen)(fen)(fen)率。早(zao)熟品(pin)(pin)種(zhong)(zhong)以9月10日(ri)~20日(ri)、晚熟品(pin)(pin)種(zhong)(zhong)以下(xia)霜前(qian)3~5天(tian)起(qi)(qi)薯(shu)(shu),出(chu)(chu)粉(fen)(fen)(fen)(fen)率最高。因為(wei)此時氣溫適宜,紅(hong)(hong)(hong)薯(shu)(shu)粉(fen)(fen)(fen)(fen)碎后粉(fen)(fen)(fen)(fen)漿發酵快,出(chu)(chu)淀(dian)粉(fen)(fen)(fen)(fen)多。如果(guo)起(qi)(qi)薯(shu)(shu)時間過晚,氣溫降(jiang)(jiang)低,薯(shu)(shu)塊(kuai)內(nei)淀(dian)粉(fen)(fen)(fen)(fen)逐漸轉(zhuan)化為(wei)糖,出(chu)(chu)粉(fen)(fen)(fen)(fen)率就(jiu)下(xia)降(jiang)(jiang)了。應盡量縮(suo)(suo)短貯(zhu)(zhu)期,農(nong)村(cun)中(zhong)有先貯(zhu)(zhu)藏(zang),后加工(gong)的(de)習慣,非常影(ying)響(xiang)(xiang)紅(hong)(hong)(hong)薯(shu)(shu)的(de)出(chu)(chu)粉(fen)(fen)(fen)(fen)率。紅(hong)(hong)(hong)薯(shu)(shu)起(qi)(qi)出(chu)(chu)來之(zhi)后,隨著貯(zhu)(zhu)存時間的(de)延長,淀(dian)粉(fen)(fen)(fen)(fen)逐漸糖化,出(chu)(chu)粉(fen)(fen)(fen)(fen)率就(jiu)會降(jiang)(jiang)低。起(qi)(qi)收后馬上就(jiu)粉(fen)(fen)(fen)(fen)碎,出(chu)(chu)粉(fen)(fen)(fen)(fen)率可(ke)達35%左(zuo)右;起(qi)(qi)收后放20天(tian),出(chu)(chu)粉(fen)(fen)(fen)(fen)率就(jiu)降(jiang)(jiang)低20%左(zuo)右。因此,在起(qi)(qi)收后20天(tian)內(nei)把紅(hong)(hong)(hong)薯(shu)(shu)加工(gong)完,可(ke)提高出(chu)(chu)粉(fen)(fen)(fen)(fen)率10%~12%。如果(guo)紅(hong)(hong)(hong)薯(shu)(shu)數量多,也(ye)可(ke)先貯(zhu)(zhu)藏(zang)后加工(gong),但(dan)應盡量縮(suo)(suo)短貯(zhu)(zhu)藏(zang)期,并注意掌握(wo)好窖(jiao)內(nei)溫濕(shi)度,以防紅(hong)(hong)(hong)薯(shu)(shu)于(yu)心(xin)。帶病的(de)紅(hong)(hong)(hong)薯(shu)(shu)不僅不適合做淀(dian)粉(fen)(fen)(fen)(fen)加工(gong)原料(liao),而且在貯(zhu)(zhu)藏(zang)中(zhong)還會傳(chuan)染給別的(de)薯(shu)(shu)塊(kuai),易發生腐爛造成(cheng)損失,因此要把病薯(shu)(shu)剔除干凈(jing)。


  (2)水(shui)洗:將(jiang)鮮薯倒入缸中(zhong)加入清水(shui),用(yong)人工進行翻洗,洗完(wan)后取出,瀝去余水(shui)。


  (3)破(po)碎(sui):瀝水后的(de)鮮薯用(yong)破(po)碎(sui)機(ji)打(da)成碎(sui)塊,塊的(de)大小為2厘(li)米以下(xia),以利于磨碎(sui)。


  (4)磨(mo)(mo)碎過濾:這是紅薯淀粉生產的(de)主要環(huan)節,影響產品(pin)質量(liang)和淀粉產出率。將鮮薯碎塊送(song)入石磨(mo)(mo)或金剛砂磨(mo)(mo)加(jia)水(shui)磨(mo)(mo)成薯糊(hu)(hu),鮮薯重量(liang)與加(jia)水(shui)量(liang)的(de)比例為1∶3~3.5。再將薯糊(hu)(hu)傾入孔徑為60目的(de)篩(shai)子中進行(xing)過濾。


  (5)兌漿(jiang):經過(guo)濾得到的(de)(de)(de)淀粉(fen)(fen)乳(ru)(ru)(ru)放入(ru)大(da)缸中(zhong),隨即按比例加(jia)入(ru)酸(suan)(suan)漿(jiang)和(he)水(shui)調整淀粉(fen)(fen)乳(ru)(ru)(ru)的(de)(de)(de)酸(suan)(suan)度(du)(du)和(he)濃度(du)(du)。淀粉(fen)(fen)乳(ru)(ru)(ru)的(de)(de)(de)酸(suan)(suan)度(du)(du)和(he)濃度(du)(du)與淀粉(fen)(fen)和(he)蛋(dan)白質的(de)(de)(de)沉(chen)淀有密切關系。若(ruo)淀粉(fen)(fen)乳(ru)(ru)(ru)酸(suan)(suan)度(du)(du)過(guo)大(da),淀粉(fen)(fen)和(he)蛋(dan)白質同時(shi)沉(chen)淀,使淀粉(fen)(fen)分離(li)不清。酸(suan)(suan)度(du)(du)過(guo)小,則(ze)蛋(dan)白質和(he)淀粉(fen)(fen)均沉(chen)淀不好,呈乳(ru)(ru)(ru)狀液,無法分離(li)。根據(ju)生產經驗,酸(suan)(suan)漿(jiang)最佳pH值(zhi)為(wei)3.6~4.0。大(da)缸中(zhong)淀粉(fen)(fen)乳(ru)(ru)(ru)濃度(du)(du)為(wei)3.5~4.0波美(mei)度(du)(du),加(jia)入(ru)酸(suan)(suan)漿(jiang)量為(wei)淀粉(fen)(fen)乳(ru)(ru)(ru)的(de)(de)(de)2%,加(jia)酸(suan)(suan)漿(jiang)后(hou)淀粉(fen)(fen)乳(ru)(ru)(ru)的(de)(de)(de)pH值(zhi)為(wei)5.6。若(ruo)氣溫高,發(fa)酵快,酸(suan)(suan)漿(jiang)用量可酌量減少。


  (6)撇缸(gang)和(he)(he)坐(zuo)(zuo)(zuo)缸(gang):兌漿后(hou)約靜(jing)置20~30分鐘,使沉(chen)淀(dian)(dian)(dian)完成,即(ji)可(ke)進(jin)行(xing)撇缸(gang)。將上(shang)層清泔水及蛋白質、纖維(wei)和(he)(he)少量(liang)淀(dian)(dian)(dian)粉(fen)的(de)混(hun)合液取出,留在(zai)底層的(de)為淀(dian)(dian)(dian)粉(fen)。在(zai)撇缸(gang)后(hou)的(de)底層淀(dian)(dian)(dian)粉(fen)中(zhong)(zhong)(zhong)加(jia)水混(hun)合,調成淀(dian)(dian)(dian)粉(fen)乳,使淀(dian)(dian)(dian)粉(fen)再沉(chen)淀(dian)(dian)(dian)。在(zai)沉(chen)淀(dian)(dian)(dian)過程(cheng)中(zhong)(zhong)(zhong)起酸漿發酵(jiao)(jiao)作(zuo)用,稱(cheng)坐(zuo)(zuo)(zuo)缸(gang)。坐(zuo)(zuo)(zuo)缸(gang)時應控(kong)制溫(wen)(wen)度(du)和(he)(he)時間。坐(zuo)(zuo)(zuo)缸(gang)溫(wen)(wen)度(du)為20℃左右。在(zai)天冷(leng)時必須保溫(wen)(wen)或在(zai)加(jia)水混(hun)合時可(ke)用熱水。坐(zuo)(zuo)(zuo)缸(gang)發酵(jiao)(jiao)必須發透(tou),在(zai)發酵(jiao)(jiao)過程(cheng)中(zhong)(zhong)(zhong)適當(dang)地攪拌,促使發酵(jiao)(jiao)完成。一(yi)般(ban)坐(zuo)(zuo)(zuo)缸(gang)時間為24小(xiao)時。天熱可(ke)相(xiang)應縮短一(yi)些時間。發酵(jiao)(jiao)完畢(bi),淀(dian)(dian)(dian)粉(fen)沉(chen)淀(dian)(dian)(dian)。


  (7)撇(pie)漿(jiang)(jiang)(jiang)過濾:坐缸(gang)所生成的(de)酸(suan)漿(jiang)(jiang)(jiang)稱為二和(he)漿(jiang)(jiang)(jiang),即酸(suan)漿(jiang)(jiang)(jiang)法中(zhong)主要使(shi)用(yong)的(de)酸(suan)漿(jiang)(jiang)(jiang)。發酵(jiao)(jiao)正常的(de)酸(suan)漿(jiang)(jiang)(jiang)有清香(xiang)味(wei),漿(jiang)(jiang)(jiang)色潔(jie)白(bai)如牛奶。若發酵(jiao)(jiao)不(bu)足或(huo)發酵(jiao)(jiao)過頭的(de)酸(suan)漿(jiang)(jiang)(jiang),色澤(ze)和(he)香(xiang)味(wei)均差,供兌漿(jiang)(jiang)(jiang)用(yong)時(shi)效(xiao)果不(bu)好。撇(pie)漿(jiang)(jiang)(jiang)即是將上(shang)(shang)層酸(suan)漿(jiang)(jiang)(jiang)撇(pie)出(chu)作為兌漿(jiang)(jiang)(jiang)之用(yong)。撇(pie)漿(jiang)(jiang)(jiang)后(hou)的(de)淀(dian)(dian)粉(fen)用(yong)篩(shai)(shai)孔為120目的(de)細篩(shai)(shai)進(jin)行篩(shai)(shai)分。篩(shai)(shai)上(shang)(shang)物為細渣,可作飼料。篩(shai)(shai)下(xia)物為淀(dian)(dian)粉(fen),轉入小(xiao)(xiao)缸(gang)。淀(dian)(dian)粉(fen)轉入小(xiao)(xiao)缸(gang)后(hou),加水漂洗淀(dian)(dian)粉(fen),約需放置24小(xiao)(xiao)時(shi),防止出(chu)現發酵(jiao)(jiao)現象。


  (8)起粉:淀(dian)(dian)粉在(zai)小缸中(zhong)沉(chen)淀(dian)(dian)后,上(shang)層(ceng)液(ye)體為小漿(jiang),可(ke)與(yu)酸漿(jiang)配合(he)使用(yong),或作(zuo)為磨碎用(yong)水(shui)。撇(pie)去小漿(jiang)后,在(zai)淀(dian)(dian)粉表面留有一(yi)層(ceng)灰白的油粉,系含(han)有蛋白質的不純(chun)淀(dian)(dian)粉。油粉可(ke)用(yong)水(shui)從(cong)淀(dian)(dian)粉表面洗去,洗出液(ye)可(ke)作(zuo)為培養(yang)酸漿(jiang)的營養(yang)物料,底(di)層(ceng)淀(dian)(dian)粉用(yong)鏟子取出,淀(dian)(dian)粉底(di)部可(ke)能有細砂粘(zhan)附(fu),應(ying)將(jiang)其(qi)刷去。


  (9)干燥(zao):經過(guo)上述流程(cheng),獲得濕淀粉。為了便(bian)于(yu)(yu)貯藏和運輸必須進行(xing)干燥(zao)。一般采用日光曬(shai)于(yu)(yu)或(huo)送入烘(hong)房烘(hong)干。
