  (2)水洗(xi):將鮮薯倒入(ru)缸中加入(ru)清水,用(yong)人工(gong)進行翻洗(xi),洗(xi)完后取(qu)出,瀝去余(yu)水。 

  

  (3)破(po)碎(sui):瀝水(shui)后的(de)鮮薯用破(po)碎(sui)機打成碎(sui)塊(kuai),塊(kuai)的(de)大(da)小為(wei)2厘米以下,以利(li)于(yu)磨碎(sui)。

  (4)磨碎過濾:這是紅薯(shu)淀(dian)粉生產的主要(yao)環節(jie),影響產品質(zhi)量和淀(dian)粉產出(chu)率。將(jiang)鮮薯(shu)碎塊送入石(shi)磨或金剛砂磨加(jia)水磨成薯(shu)糊,鮮薯(shu)重量與(yu)加(jia)水量的比(bi)例為1∶3~3.5。再將(jiang)薯(shu)糊傾(qing)入孔(kong)徑為60目的篩(shai)子中進行(xing)過濾。 

  

  (5)兌(dui)漿(jiang):經過(guo)濾得(de)到的(de)淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)放入(ru)(ru)大(da)缸中,隨即按(an)比例加入(ru)(ru)酸(suan)漿(jiang)和(he)(he)水(shui)調(diao)整淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)的(de)酸(suan)度(du)(du)(du)和(he)(he)濃度(du)(du)(du)。淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)的(de)酸(suan)度(du)(du)(du)和(he)(he)濃度(du)(du)(du)與淀(dian)(dian)(dian)粉(fen)(fen)(fen)和(he)(he)蛋(dan)(dan)白質(zhi)的(de)沉淀(dian)(dian)(dian)有密切關(guan)系。若淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)酸(suan)度(du)(du)(du)過(guo)大(da),淀(dian)(dian)(dian)粉(fen)(fen)(fen)和(he)(he)蛋(dan)(dan)白質(zhi)同(tong)時沉淀(dian)(dian)(dian),使淀(dian)(dian)(dian)粉(fen)(fen)(fen)分離(li)不清(qing)。酸(suan)度(du)(du)(du)過(guo)小,則(ze)蛋(dan)(dan)白質(zhi)和(he)(he)淀(dian)(dian)(dian)粉(fen)(fen)(fen)均(jun)沉淀(dian)(dian)(dian)不好,呈(cheng)乳(ru)狀(zhuang)液,無法分離(li)。根據生(sheng)產(chan)經驗,酸(suan)漿(jiang)zui佳pH值為3.6~4.0。大(da)缸中淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)濃度(du)(du)(du)為3.5~4.0波(bo)美度(du)(du)(du),加入(ru)(ru)酸(suan)漿(jiang)量為淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)的(de)2%,加酸(suan)漿(jiang)后淀(dian)(dian)(dian)粉(fen)(fen)(fen)乳(ru)的(de)pH值為5.6。若氣溫高,發酵快,酸(suan)漿(jiang)用(yong)量可酌量減少。 

  

  (6)撇(pie)缸(gang)(gang)和坐(zuo)缸(gang)(gang):兌漿(jiang)(jiang)后約靜(jing)置20~30分鐘,使沉(chen)淀(dian)完成(cheng)(cheng),即可(ke)(ke)進行撇(pie)缸(gang)(gang)。將上層清泔水(shui)及蛋白(bai)質、纖維和少量淀(dian)粉(fen)(fen)的混合(he)液取出,留在(zai)底層的為淀(dian)粉(fen)(fen)。在(zai)撇(pie)缸(gang)(gang)后的底層淀(dian)粉(fen)(fen)中加水(shui)混合(he),調成(cheng)(cheng)淀(dian)粉(fen)(fen)乳(ru),使淀(dian)粉(fen)(fen)再沉(chen)淀(dian)。在(zai)沉(chen)淀(dian)過(guo)程中起(qi)酸漿(jiang)(jiang)發(fa)酵(jiao)作用,稱坐(zuo)缸(gang)(gang)。坐(zuo)缸(gang)(gang)時應控制溫(wen)度(du)和時間。坐(zuo)缸(gang)(gang)溫(wen)度(du)為20℃左右。在(zai)天(tian)冷時需要(yao)保溫(wen)或在(zai)加水(shui)混合(he)時可(ke)(ke)用熱(re)水(shui)。坐(zuo)缸(gang)(gang)發(fa)酵(jiao)需要(yao)發(fa)透(tou),在(zai)發(fa)酵(jiao)過(guo)程中適當地攪拌(ban),促使發(fa)酵(jiao)完成(cheng)(cheng)。一(yi)般坐(zuo)缸(gang)(gang)時間為24小時。天(tian)熱(re)可(ke)(ke)相應縮短一(yi)些時間。發(fa)酵(jiao)完畢,淀(dian)粉(fen)(fen)沉(chen)淀(dian)。 

  

  (7)撇(pie)漿(jiang)(jiang)過濾:坐缸所生成的酸(suan)漿(jiang)(jiang)稱為二和(he)漿(jiang)(jiang),即酸(suan)漿(jiang)(jiang)法中主要使(shi)用(yong)的酸(suan)漿(jiang)(jiang)。發酵正常的酸(suan)漿(jiang)(jiang)有清香(xiang)味(wei),漿(jiang)(jiang)色(se)潔白如牛奶。若發酵不足或發酵過頭的酸(suan)漿(jiang)(jiang),色(se)澤和(he)香(xiang)味(wei)均差,供兌漿(jiang)(jiang)用(yong)時效果(guo)不好。撇(pie)漿(jiang)(jiang)即是將(jiang)上(shang)層酸(suan)漿(jiang)(jiang)撇(pie)出(chu)作為兌漿(jiang)(jiang)之用(yong)。撇(pie)漿(jiang)(jiang)后(hou)(hou)的淀(dian)(dian)粉用(yong)篩(shai)孔為120目的細篩(shai)進行篩(shai)分(fen)。篩(shai)上(shang)物為細渣,可作飼(si)料。篩(shai)下物為淀(dian)(dian)粉,轉入小(xiao)(xiao)缸。淀(dian)(dian)粉轉入小(xiao)(xiao)缸后(hou)(hou),加水(shui)漂洗淀(dian)(dian)粉,約需放置24小(xiao)(xiao)時,防止出(chu)現發酵現象。 

  

  (8)起粉(fen)(fen)(fen):淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)在小缸中沉淀(dian)(dian)(dian)(dian)(dian)后,上層(ceng)液(ye)體為(wei)(wei)小漿,可(ke)與酸漿配(pei)合使用(yong)(yong)(yong),或作為(wei)(wei)磨(mo)碎用(yong)(yong)(yong)水(shui)。撇去(qu)(qu)小漿后,在淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)表(biao)面留有一(yi)層(ceng)灰白的(de)油粉(fen)(fen)(fen),系含(han)有蛋白質的(de)不(bu)純淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)。油粉(fen)(fen)(fen)可(ke)用(yong)(yong)(yong)水(shui)從淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)表(biao)面洗(xi)去(qu)(qu),洗(xi)出(chu)液(ye)可(ke)作為(wei)(wei)培養酸漿的(de)營養物(wu)料,底層(ceng)淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)用(yong)(yong)(yong)鏟子取出(chu),淀(dian)(dian)(dian)(dian)(dian)粉(fen)(fen)(fen)底部可(ke)能有細砂粘附(fu),應將其刷去(qu)(qu)。 

  

  (9)干(gan)(gan)燥:經過上述流程(cheng),獲(huo)得濕淀粉。為了便于貯藏和運輸需要進行干(gan)(gan)燥。一般采(cai)用日(ri)光曬于或送入烘(hong)房烘(hong)干(gan)(gan)。
